"La Julieta · Victor Flórez · Double Washed · Chiroso · Villa Julieta, Urrao, Antioquia
In 2000 the Flórez family was displaced by armed conflict and lost everything. They rebuilt on coffee, and this Chiroso from Villa Julieta, their farm in Urrao, Antioquia, scored 88.11 points.
Victor Flórez runs the farm with his father, Alberto, on a little over two hectares between 1,900 and 2,000 metres, and named it for his daughter. They were experienced farmers, but specialty coffee was new ground. Victor taught himself processing and developed the fermentation protocols for their Chiroso, whose trees are now just over four years old. The farm also provides work for four single mothers from the community.
They entered the Collection to see where that progress stands against the best lots in the country. Urrao's cool climate shapes everything here, from how slowly the cherries ripen to how long the coffee takes to dry.
The process is a double fermentation. Hand selected cherries ferment for 48 hours before depulping, then the coffee ferments for a second, extended 66 hours. It is washed and moved to a covered patio for a slow drying the cool climate demands. The cup has honeysuckle florals with grape, cherry, apricot and fig, and the round sweetness of maple syrup."
