"La Loma · Marcel Ordoñez · Anaerobic Washed · Sidra · El Diamante, Colón, Nariño

Marcel Ordoñez picked this Sidra in four separate passes, leaving five weeks between each so that only fully ripe fruit made the lot. It scored 88.15 points.

Marcel is the fourth generation of his family to grow coffee on El Diamante, at 1,950 metres in Colón, Nariño, and he works the farm with a Q Grader's palate. Eight years ago he led the family away from conventional coffee toward specialty, replacing Catimors with Bourbons and Geishas. The family does not talk about generational replacement. They call it empalme generacional, a generational connection between his parents' and grandparents' experience and the technical training of the younger generation.

With his father, Marcel also runs Bioagro Café Colombia, a nursery that propagates regional and exotic varieties alongside native trees for reforestation in their community. This year an intense dry season tested the farm, and they installed a new irrigation system to protect 1.2 hectares of three and a half year old Sidra trees. Those are the trees behind this lot.

The fermentation combines a 72 hour anaerobic stage in sealed drums with a 24 hour oxidation phase, and the coffee then dries for eight days in a solar tunnel. The cup is led by orange, with grape, grapefruit and plum, a black tea finish and a nutty depth."
