"La Colombia · Vásquez and Aguirre family · Anaerobic Honey · Chiroso · La Colombia, Ciudad Bolívar, Antioquia
Finca La Colombia grows coffee across 650 metres of altitude, from 1,650 to 2,300 metres in the highlands of Ciudad Bolívar. This Chiroso came from 1,950 metres and scored 90.13 points, second in the collection.
The farm belongs to the Vásquez and Aguirre family, represented by Gabriel Jaime Vásquez, and they have focused on high quality coffee for twelve years. Of their land, 58 hectares are planted with a mix of traditional plantations and renewed lots of Gesha, Bourbon Sidra and Maragogype, and 55 are protected reserve for native plants and wildlife. This season's variable weather unsettled both ripening and drying, and the family answered with stricter cherry selection and tighter control of temperature and fermentation.
The processing is an anaerobic honey in three stages. Whole cherries oxidised for 48 hours. The depulped parchment, still in its mucilage, was then sealed in drums for 132 hours. Drying took about 185 hours in a covered solar dryer, slow enough to hold the sweetness and fruit.
In the cup, magnolia, lime and tangerine lead into green grape and cherry, with a tingle of green Sichuan peppercorn over a smooth, velvety body."
