"La Reserva · Juan Felipe Ocampo · Anaerobic Honey · Sidra · La Reserva, Ciudad Bolívar, Antioquia
The highest scoring coffee in the Colombia Farmer's Collection is a Sidra from Ciudad Bolívar, Antioquia. La Reserva scored 91.01 points to take first place in the collection's first edition.
Juan Felipe Ocampo acquired the farm in 2018 and runs it as a project of scale and conscience. Two hundred hectares are kept as native forest, an ecological corridor that shapes the farm's microclimate. Within it, 61 hectares are planted with Sidra, Gesha, Wush Wush, SL28 and Mokka. This season brought prolonged dry spells, and picking cherry for small, separated lots took close coordination of people and land.
The lot was grown at 1,850 metres and processed as an anaerobic honey. Whole cherries were left to oxidise for 48 hours, concentrating the sugars in the pulp. After depulping, the beans went into a 120 hour anaerobic fermentation still coated in their mucilage. Drying ran for around 120 hours in a mechanical dryer held at 35 to 40°C, slow enough to protect the aromatics.
The cup opens on jasmine and magnolia, then runs through mango, papaya and passion fruit before settling into oolong tea."
