"Entre Montañas N1 · Jose Giraldo · Oxi Natural · Geisha · Las Marías, Pijao, Quindío
In 2015 Jose Giraldo took his family's coffee to the SCA Expo in
Seattle and came home with the lowest score at the event. Eleven
years later, this Geisha natural from Las Marías scored
88.49 points.
He had come back to the farm that year after his mother, Clara,
died. He was 23 and working in textiles, far from the coffee his
family had grown on the slopes of Pijao, Quindío for more
than five decades. After Seattle he started measuring everything
that had been done by habit: pH, Brix, temperature curves, exact
fermentation times. His father, Germán, who holds a PhD in
Food Science, became the scientist behind the work, and together
they turned the traditional wet mill, La Clarita, into a precision
lab between 1,800 and 2,050 metres. Their coffees carry the name
1959, the year Clara was born.
The Geisha is picked cherry by cherry at optimal Brix, with
culling done on the tree. Cherries are floated to separate by
density, and only the heaviest go forward. The whole fruit then
spends 36 hours in an oxidator in a cold room at 10°C before
drying with pulp and mucilage intact.
The cup is crisp and layered: apple, grapefruit, strawberry,
pineapple and plum over a chocolate core."
