Bani Zaidan is a cluster of families farming adjoining terraces at 1,800 metres on the edge of Wadi Anis, and a lot like this is assembled across many of their holdings, with the harvest coordinated between households rather than run by any one of them.

The variety is Kent, which has settled well into this dry volcanic ground, and what people prize in it here is its fruit. This process leans hard into that, because the fruit never leaves the bean.

The cherries are depulped dry, so the sticky mucilage layer stays on, then fermented under controlled gas and dried slowly in the open air. No water is used at any point, which in Maghrib Ans is less a technical footnote than the reason the process exists at all. Where the Alchemy protocols give lift and definition, honey gives weight, texture and a rounder sweetness.

Bani Zaidan lots have been in the last two auctions. This is the first time the community's Kent has gone out as a honey.
