Al Mahjar is not what people expect of a remote coffee valley. Most of the farmers here have been through university or secondary school, and the valley farms accordingly, treating quality as something to be worked out rather than hoped for.

Between eighty and ninety producers work this ground, Bait Wael among them, and many of their trees have been bearing fruit for generations. Because the auction sells each valley's coffee under its own name, Bait Wael has built a reputation that belongs to it specifically rather than to Yemen in general.

This lot was made with Carbonic Honey, a process designed for a place with no water to spare. The cherries are depulped dry, so the sticky mucilage stays on the bean, then fermented under controlled gas and dried slowly in open air. It gives weight and texture where the Alchemy protocols give lift and clarity.

Buyers have already shown what they make of processed coffee from here. Bait Wael's entry in the 2024 auction drew one of the highest prices of that year. What holds the valley back is storage rather than skill: there are few natural water sources and too few tanks to hold the rain when it arrives, and disease moves through the trees in a bad season.
