The Subaih family have been the custodians of coffee on this part of Bait Alal for generations, farming terraces handed down for centuries at 2,300 metres in the rugged mountains of Hayma Kharijiya. Ownership records in the village run back hundreds of years, and the continuity between the land, the family and the crop is unusually unbroken.
The trees are genetically verified Yemenia, the mother population found nowhere outside Yemen. They grow in thin soils, through cold winters and on very little rain, and the yields are consistently low as a result. In conditions like that, clarity in the cup is not a happy accident; it comes from precision at every stage, from deciding which cherries are ready to how they are handled once they leave the tree.
Around three hundred farming families live in Bait Alal, and all of them treat the coffee tree as a mark of pride and identity. Many believe coffee itself began in these highlands. The village has gone on producing some of the most celebrated lots in the country.
