"Mi Nuevo Mundo · Tatiana Pete · Double Washed · Geisha · La Rosi, La Plata, Huila
Tatiana Pete is twenty years old and is turning her grandparents' traditional farm into a specialty coffee project. Her washed Geisha, Mi Nuevo Mundo, scored 88.01 points.
La Rosi sits at 1,700 metres in La Plata, Huila. It is named for her grandmother, Carmen Rosa, who first worked the land with her husband, Emiliano. Tatiana was drawn to coffee as a child on their farm and later learned the trade from an uncle who, before he passed away, pushed her to take up cupping. Her grandparents were sceptical of specialty methods at first. Now they work alongside her on the nine hectares shared by Tatiana's mother and aunts, and neighbours come to her for advice.
The hardest part is not the climate. Her district, Villa Mercedes Parte Alta, lives with armed conflict, which restricts access and makes working the land uncertain. She named the lot My New World to mark a turning point for her family after a difficult period.
The process is a two stage washed fermentation. Selectively picked cherries ferment for 24 hours before depulping. The parchment is then submerged in water with its mucilage for another 24 hours, and dried slowly on patios in the sun. The cup is lemon, peach, melon and lime with lemongrass, finishing on honey, light bodied and clean."
