Richard Eduardo Alvarado manages Cofradía, a 53-hectare
property in Catacocha, Loja, where coffee grows within a dry forest
ecosystem at 1,550 masl. Extended dry seasons have required the
introduction of reservoir-based irrigation to support younger trees
through periods of limited rainfall. Part of the land is managed
for conservation alongside active coffee production.
This Sidra Bourbon lot follows a Carbonic Maceration process, with
fermentation carried out in sealed tanks before on-site drying.
Investments in processing infrastructure in recent years have
allowed fermentation and drying to be managed under increasingly
stable conditions. Pineapple, raspberry, and cardamom — the
dry forest terroir of Catacocha expressing itself through the
intensity of sealed-tank fermentation.
