Sixty years is a long time to spend learning one crop. Katibah Jafar started as a girl on her father's terraces in Hijrat Al Ain, working alongside her siblings, and she has been reading these trees ever since. She farms them now with her husband, the person she says she relies on most, and with her children coming up behind her.
Her farm runs to around seven hundred mature trees. Nothing on it is young, which is rather the point: these are trees she has known for decades and she picks them accordingly. What specialty coffee changed was not the trees but the standard. The family now harvests only fully ripe red cherry and sells it as a graded product, which asks a great deal of the picker and rewards the one who knows precisely when a cherry is ready.
That judgement has a market. Katibah was in the 2024 auction and again in 2025, when her lot was bought by George Howell Coffee in the United States, one of the most exacting roasters in American specialty.
What she wants next is more trees. Her reasoning is simple enough: a bigger farm is a better inheritance, and she would rather leave her children something that grows.
