Finca El Dorado - Green Tip Geisha DF
El Dorado - 2980
22
El Dorado in Olmedo, Loja, sits at 1,770 masl — part of
Bernie Uhe's multi-site operation across southern Ecuador. Green
Tip Geisha is planted at multiple elevations within his farms, and
each one provides a different data point: what does this variety do
at 1,710 versus 1,770 versus 1,900 metres, under different process
conditions?
This lot follows an Anaerobic Washed DF process —
fermentation under restricted oxygen before pulping and controlled
drying, managed through the moderate temperature shifts and
sustained humidity typical of El Dorado during harvest. The
jasmine, tangerine, and mango profile reflects how anaerobic
fermentation at this elevation draws tropical fruit character
forward in a variety already inclined toward aromatic
complexity.
