Some of the trees that went into this lot may be older than the country's borders. The process that shaped it is two years old. That collision is the point of it.
XCI belongs to the most recent chapter of Qima's Alchemy series, developed after a decade of trials in which pressure, temperature, gas and drying were each measured and adjusted until the results could be repeated on purpose. It pushes anaerobic fermentation considerably further than the protocols that came before, and the achievement is that it does so without losing definition. Intense and structured, but still clean.
The coffee itself comes from Bait Alal, more than 2,300 metres up in Hayma Kharijiya, where between a hundred and a hundred and twenty farmers work holdings too small to fill a lot alone. Nobody here planted their own trees from scratch. The trees were inherited, along with the terraces they stand on, and in this village that inheritance is the main form of wealth a family has.
