Servio Gonzales cultivates coffee at Clara Luz in San Antonio de
las Aradas, Quilanga, Loja, where the farm spans approximately 12
hectares — around seven under active coffee production at
1,720 masl. Three generations of agricultural experience inform the
work, with recent efforts directed toward strengthening
post-harvest control and improving lot separation.
Seasonal temperature variation between 17°C and 30°C
throughout the harvest period can influence both fermentation and
drying timelines for this Natural-processed Geisha. Cherries are
selectively harvested before whole-fruit drying under close
monitoring. The bergamot, plum, and cranberry profile reflects
Geisha processed naturally at mid-altitude Quilanga — more
earth and dried fruit than its Washed counterparts, the variety
filtered through place rather than stripped back to a clean
varietal statement.
