Mario Jose Hervas established his coffee project in the El
Meridiano area of San José de Minas, Pichincha, as a
first-generation producer entering coffee after working outside
agriculture. Starting from land preparation, he has built
approximately 10 hectares at 1,400 masl under an agroforestry
system integrating citrus and timber species for partial
shade.
Humidity at the site can exceed 90% during certain months —
one of the more challenging drying environments in this competition
— requiring careful coordination between harvesting and
post-harvest handling to avoid instability. This Typica Mejorado
lot follows a Washed process with controlled fermentation prior to
pulping. Mario's current focus is refining fermentation timing and
improving airflow during drying to stabilise moisture reduction
under a climate that rarely makes the job straightforward.
