Jonathan Patricio Jumbo Vélez is 41 years old and a
third-generation coffee producer in Cariamanga, Loja. His
grandfather started it, his father continued it, and now Johonnatan
has taken the family's long involvement in coffee and pointed it
toward specialty production. The farm — Cafe Johann, named
for his son — has 10 hectares under coffee within a
30-hectare property at 1,800 masl, managed under native shade
species including paique, arabisto, and poma rosa, alongside guava,
orange, and lemon.
Johonnatan's approach to fermentation is scientifically precise.
He isolates native yeasts from the coffee itself, cultivates an
inoculum in-house, then ferments whole cherry in sealed tanks for
72 hours. Drying follows under shade for approximately 50 days to
reach 11% moisture. He describes specialty production as a long
learning curve — every technical error a lesson that builds
