Pacamara at Cruz Loma in Gualea Las Tolas is one of the more
unusual offerings in this competition. Galo Morales cultivates the
variety at 1,800 masl under conditions marked by high humidity and
extended ripening cycles — an environment that has required
continual adjustment since the farm relocated to this site in
Pichincha.
This lot follows a Honey process, with mucilage retained during
drying to support structural balance in the cup. It is the third of
three Cruz Loma lots in this competition: a Washed Sidra Bourbon, a
Honey Typica Mejorado, and this Honey Pacamara. Each one a
different variety, a different process, the same relocated farm
— and together they show the breadth of what Galo is learning
to produce as Cruz Loma finds its footing.
