At El Dorado in Olmedo, Loja, Bernie Uhe cultivates Wush Wush at
1,770 masl as part of a programme of varietal evaluation across
elevation bands. His operation across three farms — La Noria,
El Dorado, and Finca Eliza — is built around the question of
how altitude and process interact, with a stable team of 20 to 30
people enabling the consistency required to compare results
meaningfully.
For this lot, fermentation was carried out under anaerobic
conditions prior to pulping — a controlled approach applied
to manage the site's sustained humidity and temperature variation
during the harvest season. Bernie's broader goal in the
international market is to demonstrate what careful high-altitude
processing in southern Ecuador can produce across a range of
varieties. Pineapple, cranberry, and passion fruit: Wush Wush
expressing itself cleanly through Anaerobic Washed process at El
Dorado. Scored 88.20.
