[PRACTICE] Andres Yepez - Geisha
Hosteria Canavalle
1
Andrés Yepez didn't inherit a coffee farm — he
built one. Working land that was once cattle pasture near Ibarra in
Ecuador's Imbabura region, he has spent the last five years
converting Canavalle Farm into a specialty coffee operation, plot
by plot, at 2,140 masl.
Shade planting, soil recovery, and the protection of nearby water
sources guide his approach. Across the farm, more than a dozen
varieties are under observation — each one a trial in how
Imbabura's Andean microclimate translates to the cup. This Geisha
lot is washed, with all harvesting and post-harvest handling
carried out on-site.
He is still building. The farm is still becoming. That's exactly
the point.
